I'll admit that I covet Saturday. A chance to sleep in and make something yummy for breakfast that takes longer than adding milk to a bowl. It's Kingcake season in the Big Easy and I've been indulging my sweet tooth. As a baker, this is my favorite time of year. You can see what I'm talking about on my instagram feed. All of this sugary bliss, however, leaves me craving savory things for breakfast and superfood oatmeal is the perfect balance between savory and sweet. Packed full of vitamins and minerals to kick the weekend off right. If you never considered adding turmeric to your oatmeal, now is the time. The aromatic, earthy taste is usually reserved for indian curries but this spice is also a wonderful anti-inflammatory with notes of orange and ginger. Date sugar balances out the pungent bitterness perfectly. Top this warm, hearty bowl of self love with all manner of superfoods. Walnuts are full of heart healthy omegas, sesame seeds are an excellent source of copper, pumpkin seeds are a nutritional powerhouse of zinc, magnesium and manganese and the sweet tart goji berry is packed with protein, thiamin and calcium. Don't even get me started on the benefits of coconut and golden berries! Whoa, your heart will be doing backflips and your body will thank you all afternoon. Makes 2 servings
2/3 cup rolled oats
1 1/2 cups coconut water or milk
1/4 cup golden berries
1 teaspoon coconut oil or non-dairy butter
1/4 teaspoon salt
1/2 teaspoon ground turmeric
2 teaspoons date palm sugar or coconut sugar
1/2 teaspoon ground cardamom
1/2 teaspoon ground ashwagandha root
1 teaspoon vanilla
1/4 teaspoon black pepper
2 tablespoons walnuts
2 tablespoons shredded coconut
2 tablespoons pumpkin seeds (pepitas)
2 tablespoons goji berries
2 teaspoons sesame seeds
2 tablespoons maple syrup
1/2 cup non-dairy milk (I used coconut milk because it's thick and creamy)
- Combine oats, water, golden berries, coconut oil and salt in a small saucepan.
- Bring to a boil over medium heat and let simmer until thick and creamy. This takes about 5 minutes. Leave it alone and go make some coffee and come back to it. It's like magic.
- Stir in the spices (turmeric through black pepper).
- Divide into two bowls and top with the remaining goodies.
- Hug your warm bowl of oats and eat up!
Note: Make sure you use gluten free oats. Read the package, you would be surprised that most are not. I use Bob's Red Mill Gluten Free Rolled Oats. You can order them on Amazon if you can't find them at your local health food market.
